Low Fat Egg Nog
Ingredients:
- 1 large egg
- 1/4 cup fat-free egg substitute
- 1/4 cup sugar
- 2 cups fat-free evaporated milk
- 1 teaspoon vanilla extract
- 1/4 cup brandy or rum, 80 proof
- 1 teaspoon ground nutmeg
Directions:
Beat together egg, egg substitute and sugar in a pot.Cook mixture over low heat on stove and cook over low heat, stirring constantly until thickened slightly and very steamy. Do not let eggnog boil.
Warm milk until it steams, but do not bil. Slowly whisk it into the egg mixture. Mix in vanilla. Chill thoroughly until ready to serve.
Stir in brandy and garnish with nutmeg. Serves 4.
