Egg Nog Bread
Ingredients:
- 2 eggs
- 1 cup egg nog
- 1/2 cup butter, melted
- 2 teaspoons rum or rum extract
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg, ground
- 1/2 cup pecans, chopped
- 1/2 cup candied or dried cherries, chopped
Directions:
Preheat oven to 350 degrees.
Grease a 9 x 5-inch loaf pan.
Beat eggs, add sugar, eggnog, butter, rum extract, and vanilla extract.
Stir in flour, baking powder, salt, nutmeg, pecans, and cherries. Stil just until blended. Over stirring will make bread tough. Pour batter into prepared loaf pan. Bake for 45-50 minutes.
